1. Line a cookie sheet with foil.
2. Place 4 slices of bacon on the cookie sheet. 3. Turn the oven on to 450 degrees and put the bacon in. Cook bacon for 15 minutes. 4. Meanwhile, rinse and clean the spouts: cut the stem end from each one and remove any tough or yellowed outer leaves (this should be no more than 4 leaves per plant, usually fewer). Cut each spout in half. Some leaves will separate off; mix them in with the halved sprouts. 5. After 15 minutes, take the pan from the oven and remove the bacon if crisp. If bacon is not yet crisp, cook until crisp. Remove bacon to paper towel, leaving grease in the pan. 6. Put the spouts on the cookie sheet, stirring until coated with bacon grease. Return to oven. 7. Bake 10 minutes, stir, and bake 10 minutes more; when done, they will be carmelized on the cut side. Individual leaves may be brown and crispy and that's OK - they are delicious! If the spouts start to get too brown, remove early. 8. Remove from oven, salt to taste (if needed) and serve immediately. Serves 4. |

Baking bacon at a high temperature, as in this recipe, is commonly done in restaurants and a great way to cook bacon at home. You can prepare quite a bit at once, you don't have to turn it, it comes out straight, and there is no grease on the stove. Win!
